I know that I'm a day late a...Hi Shirley,<br /><br /> I know that I'm a day late and a dime short, but I didn't want to go on another moment without leaving a copy of my favorite dessert. It's a Baked Chocolate Pudding. It's super easy, and it works for holidays like Thanksgiving or Christmas Dinner expecially if you decorae with some of those Chrimassie colored sprinkles on top. A little bit goes a long way to settle my chocolate needs for a good while.<br /><br />Here it is:<br /><br />BAKED CHOCOLATE PUDDING<br /><br />1 cup flour <br />3/4 cup granulated sugar<br />2 tsp baking powder <br />1/2 tsp salt<br />1 tsp vanilla <br />1/2 cup milk<br />1/2 cup nuts <br />2 tbsp melted butter or margarine<br />3/4 to 1 cup brown sugar <br />1 cup hot water<br />6 tbsp unsweetened cocoa powder, divided use<br /><br />Preheat oven to 350 degrees F. Butter a 9x5 or 8x8-inch baking dish well.<br /><br />Combine and sift flour, granulated sugar, 3 tbsp cocoa powder, baking powder, and salt. <br />Stir vanilla into the milk and add to the dry ingredients. Stir in nuts and melted butter. Pour into prepared baking dish. <br />Combine 3/4 to 1 cup brown sugar and the remaining 3 tbsp cocoa. Sprinkle over the batter in the baking dish. It is YUM.<br /><br />Ingredients:<br />brownies<br />whip cream<br />Chocolate syrup<br />toffee pieces<br /><br />Bake one batch of brownies according to directions and let cool in pan.<br /><br /><br />When cool break into bite size pieces in serving dish of your choice. A 9x13 glass cake pan is a good option.<br /><br />Spread a layer of brownie pieces in dish. Top with half a container of whip cream. Sprinkle about 1/2 cup (or more if you like) on top of whip cream. She was a farmer's wife in Nova Scotia.<br /><br /><br />Aunt Hilda Young's Chocolate Cake<br /><br />2 cups sugar<br />½ cup butter, room temperature<br />2 eggs<br />¾ cup sour milk (milk + 1 teaspoon vinegar)<br />1 teaspoon vanilla<br />2 cups flour<br />1 teaspoon baking soda<br />½ teaspoon baking powder<br />½ teaspoon salt<br />½ cup cocoa, dissolved in 1 cup boiling water<br /><br />Preheat oven to 350. Grease bundt pan, tube pan, or two layer pans.<br />Sift together flour, soda, baking powder and salt. Cream sugar and butter. Add eggs, beat until well combined. Add dry ingredients alternately with milk and cocoa water. Mix until well blended.<br />Bake for 45 – 50 minutes, do the toothpick test. (25 - 30 minutes for layer pans). Cool in pans on rack for 10 minutes. There are many reasons why I love this recipe. It never fails. Everyone loves it-- even people who don't like chocolate *shudder, let's all pray for their sanity*. It's very forgiving. It uses simple ingredients that you have in your pantry right now. Really?<br /><br />Really.<br /><br />I make one of these whenever I deserve a treat, and you’d be surprised how often I deserve a treat. Only about 125 calories, and simple to make -<br /><br />1 cup almond milk<br /><br />1 tsp Truvia or 1 squirt of Sweetleaf liquid stevia<br /><br />2 heaping tsps cocoa powder<br /><br />1 cup frozen strawberries<br /><br />I make this right in the serving glass with my beloved Cuisinart Smart Stick immersion blender (uncompensated product endorsement!), so there’s less to clean up. First blend the cocoa and sweetener into the almond milk, then blend in the strawberries several at a time.<br /><br />The frozen strawberries give the cold and thickness, and of course the cocoa and stevia bring the yum.<br /><br />You could use cow’s milk and sugar, I suppose, but why would you? If you haven’t tried almond milk, you owe it to youself. It has the thickness and consistency of regular milk, but fewer calories and fat than skim milk. Does it taste exactly like cow’s milk? No – it tastes better! (IMO, of course.)<br /><br />And one last thing – to take this chocolate milk shake right over the top, when you’re blending in the cocoa powder, add a sprinkle of cinnamon. On medium heat, bring to a boil for one full minute.<br /><br />Remove from heat. Stir in peanut butter (optional), vanilla and oatmeal.<br /><br />Drop by spoonful onto wax paper. Let cool for at least 30 minutes.<br /><br />Make sure you cook for a full minute or longer, if you try to take short cuts, it won't harden correctly and it is soft and gooey.
