Liz Flaherty's Soft Molasses Cookies


Liz's book is out now (The Debutante's Second Chance) so definitely pick it up if you haven't already. You DEFINITELY won't be disappointed!! She's got a great recipe here, too, especially if the back to school season has you in the mood for cookies. I'm always in the mood for cookies, LOL. Read on for a GREAT invitation from Liz, too!!


When Shirley invited me to be her guest for the day, I was tickled to death. But then she said, "Bring your favorite recipe." (Well, maybe she didn't say it just exactly that way, but bear with me, okay?) Since I've raised three kids and have remained 30 pounds overweight on my favorite recipes, that shouldn't be a problem, should it?


Ahem.


My favorite recipes are Kraft macaroni and cheese (the kind with the cheese in a pouch), chili made with Brooks chili seasoning, and chocolate chip cookies made by following the instructions on the back of the chips bag. So I'm going to do what all cooks of my caliber do: I'm going to steal. Only I'm taking it from my daughter-in-law Laura, so it's really only borrowing.


These cookies are sinfully delicious and I'm almost sure they're directly responsible for at least five of these 30 pounds I'm hauling around.Laura even wrote the recipe in such perfect linear order that even the least culinary among us can't mess it up.

SOFT MOLASSES COOKIES

6 c. sifted flour

1 tsp. baking powder

1 c. shortening

1 c. molasses

1 c. sugar

1 tbsp. soda

1 tsp. salt

1 tbsp. cinnamon

1 egg

1 c. hot water

1. Sift dry ingredients together.

2. Cream shortening, add sugar, cream until light and fluffy. Add eggs and molasses. Beat well.

3. Add ½ of flour mixture (#1 mixture) to #2 mixture, beat well.

4. Add water and beat until smooth.

5. Add remainder of flour mixture, mix well.

6. Chill thoroughly

7. Roll to ¼ inch thick on floured board.

8. Cut with floured cookie cutter.

9. Bake for 12 to 15 minutes or until done at 375ยบ.
