New Recipe: Ranch Cheddar Chicken


Finally back to cooking again after a long hiatus :-) DH was starting to wonder about me, LOL.


But we had a lot of parties here, which meant finger food (which meant easy meals for me!) and plus at the end of the year, we had LOTS of kid stuff--soccer season, choir performances, youth group, 8th grade graduation, etc., so it seemed we were always in the car, which meant a lot of takeout dinners.


But I did try two new dinners. Here's one of them (a hit with the whole family):


Ranch Cheddar Chicken



3/4 cup Ranch dressing mix (I buy the big container of Hidden Valley Ranch mix at Sam's Club)
3/4 cup Cheddar cheese
1/4 cup Parmesan cheese
6 boneless chicken breasts


Dredge chicken in Ranch mix. Place on baking sheet (I put foil on mine and sprayed Pam on it to make clean up a lot easier). Then mix cheeses together and sprinkle on top of chicken. Bake at 375 degrees for 30-45 minutes (depends on how thick your chicken is) until chicken is done (an internal temperature of 165 degrees).


That's it! It was really good. I served it with twice baked potatoes and my garlicky green beans (which I thought I'd already run in my blog, but couldn't find so...










Garlicky Green Beans







2 tablespoons olive oil
1/2 to 1 teaspoon chopped garlic (we like a lot of garlic, so we go on the high end)
1 16 ounce bag of frozen green beans
1/2 teaspoon garlic salt
1/4 teaspoon kosher salt











Heat olive oil over medium heat in non-stick pan. Add garlic and cook for one minute or so, just until it starts to give off a nice garlic scent :-). Add the green beans, cook until softened a bit. Add the garlic salt and kosher salt. Cover and cook for 10-15 minutes, turning every few minutes. Add more seasoning if you like them really garlicky. Very good for your heart :-)

    Since I just LOVE your Mexican chicken, I will give this a go soon. Sound delish. You are a girl after my own heart. I love this also 'cuz it can be wheat free, right up my alley. Thanks for sharing!
