Thanksgiving Treat: Janie's Sweet Potato Casserole

Next to my crock-pot mashed potatoes, this is my favorite holiday dish. My husband's aunt gets all the credit, because she brought it to a family get-together, and I was sold :-)

Janie's Sweet Potato Casserole

1 40-ounce can sweet potatoes, drained and mashed
1 cup sugar
2 eggs
1/2 cup milk
1/2 teaspoon salt
5 tablespoons butter or margarine, melted
1 teaspoon vanilla

Topping:
1 cup brown sugar
1/2 cup flour
1 cup pecans, chopped
5 tablespoons butter or margarine, melted

Preheat oven to 350 degrees. Mix first seven ingredients together and pour into a buttered casserole pan. In a separate bowl, combine the topping ingredients. Crumble over the top of sweet potatoes, then bake for 30 to 45 minutes.

Between this and Aunt Nancy's secret fudge recipe (man, nothing beats that for a dessert!), I must gain about ten pounds at the Thanksgiving and Christmas dinner tables. But it's all worth it...every bite :-)
