I'm typing the title for this blog post and listening to the news this morning and have to stop typing. Now, I live in the Midwest. Home of some very weird things. They're talking about some robbers who were being chased by the police. So in the wisdom of all things burglar, the robbers stripped off their clothes as they ran and lost not only their clothes, but also the money they had robbed, leaving a trail of t-shirts, pants and hundred dollar bills.
Hansel and Gretel only left bread crumbs. Geez, where was their originality?
In painful topics ;-), I did my r-alk this morning. And hated every second of it. I never like running but today I REALLY hated it. But I did it. And now I can wait a full twenty-four hours before I have to do it again. Yippee
I'm now up to nearly two miles (1.9 miles to be exact). For a woman whose idea of exercise is having to get off the sofa to find the remote, that's a huge achievement. :-)
Oh, and I promised a recipe. I made this last night and it was Yum-O as Rachael Ray would say:
Shirley's Easy Chicken Dijon
1/2 cup Ranch Dressing (I used 3-Cheese because, well, I like 3-Cheese Ranch)
2 Tablespoons Dijon Mustard
2 tablespoons olive oil
salt
pepper
6 boneless skinless chicken breasts
4 tablespoons chicken broth or white wine
Mix the dressing and mustard and set aside. Heat the oil on med/high in a non-stick pan. Sprinkle the chicken with salt and pepper (FYI, I use kosher salt and grind fresh pepper for all my cooking stuff...if you want to know why, watch Alton Brown on Good Eats; it's something about the way the bigger pieces of the kosher salt sticks around for flavor when cooking and the fresh ground pepper tastes better). Brown chicken on both sides, about 5 minutes or so (depending on thickness of your chicken) until it's done, then remove from the pan.
Add the broth, stir and cook for two minutes. Add dressing mix, whisk and bring to a boil, cook for one minute. Serve over chicken.
You can serve it with rice or noodles. Me, I was good and ate it with broccoli :-)
Oh, and speaking of other idiots in the news -- I was on GMA Radio yesterday on XM. I called in to comment on the new fashion trends. More on that in the next blog!

Speaking of dumb criminals in the midwest, I just read recently that here in Fishers a couple guys robbed a convenience store for a winning lottery ticket. They got caught trying to cash it in later the next day.
LOL. That is pretty stupid. At least take it to a different store.
